Blueberry Cheesecake
Ingredients:Crust:
-1/4 cup almonds
-1 cup oats
-1/2 scoop Isagenix Isapro protein powder
-2 tbsp macadamia nut oil
-1/2 tbsp cinnamon
-10 drops vanilla liquid stevia
-1/2 cup almond butter
Pie:
-1 1/3 cup fresh or frozen blueberries
-1 pack no fat cream cheese
-1 cup lowfat cottage cheese
-1 tbsp lemon juice
-1 tbsp vanilla extract
-4 egg whites
-1 cup plain non fat greek yogurt
-1/2 scoop Isagenix Isapro protein powder
- 10 drops vanilla liquid stevia
Directions:
-Preheat oven to 375
-blend almonds and oats together in blender or food processor
-combine the rest of the crust ingredients and blend until thick
-press into the bottom of a springform pan
-bake for 8 to 10 minutes, until fragrant and beginning to brown.
-Remove and raise oven heat to 400
-put cream cheese in mixing bowl, and beat until fluffy
-add other ingredients, scraping the bowl and beaters each time, fully incorporating each ingredient. -when all ingredients are combined, scrape one more time, beat one more minute
-pour entire mixture into crust
-bake at 400 for 30 min
-drop oven temp to 200 and bake for an additional 30-60 minutes until edges are slightly golden, checking often after a full hour of cooking time
-chill thoroughly overnight or at least 8 hours
